Chicken Pesto Meatballs


Ingredients
2 pounds ground Chicken
1/4 cup Basil Pesto
1/4 cup finely diced Shallot
1/4 cup Almond Flour
2 tablespoons grated Parmesan Cheese
1/4 teaspoon Red Pepper Flakes
1 teaspoon Salt
1/4 teaspoon black pepper
1 teaspoon Italian Seasoning

Instructions

  1. Add all ingredients to a mixing bowl and use your hands to mix until well combined.
  2. Next, use a spoon to scoop out the meatball mixture and use your hands to form into meatballs.
  3. When the meatballs are formed, add to a 9×13 bake and bake at 350 degrees for 30 mins.
  4. Serve over pasta, salad or hummus with black beans.
