Ingredients
10 slices Turkey lunch meat or 10 ounces of shredded Turkey
2 cups chopped Apples
½ cup chopped onion
10 ounces of sweet potato, cut into 1/4 inch pieces
1 teaspoons Thyme
¼ teaspoon Black Pepper
6 Eggs
¾ cup Milk
¾ cup shredded Cheese
Directions
- Preheat oven to 350 degrees F. Spray 9×9 pan with cooking spray.
- Add chopped Turkey, Apples, and Onion to skillet. Cook over medium heat for 5 minutes, stirring occasionally. Add sweet potato; cook 10 minutes or just until potato is tender, stirring frequently. Stir in thyme and pepper.
- Pour potato mixture into pan. In a medium bowl combine egg and milk; pour over potato mixture. Top with cheese.
- Bake 40 minutes or until puffed and a knife comes out clean. Serve warm.
